Ingredients:
- Butter softened as much as 1/4 cup
- 2 green onions finely chopped
- Fresh parsley chopped two tablespoons

- 3 cloves of minced garlic
- Salt as much as 1 teaspoon
- 1/2 teaspoon pepper
- 4 Cornish chickens (20 to 24 ounces each). We’re going to make a big meal today.

Step1:
Mix these ingredients in a small bowl. These are: butter, parsley, ginger, onion, 1/2 teaspoon salt, and 1/4 teaspoon pepper

Then the ingredients that have been mixed earlier, are applied to the inside or outside of the chicken skin. The remaining salt is sprinkled in the chicken cavity.

Step 3:
Using long-handled tongs, moisten a paper towel with cooking oil, and lightly coat the grill rack. Prepare the grill for indirect heat, using a drip pan.
Step 4:
Place the chicken breasts in a drip pan, bake, covered, over medium heat for about 45 to 60 minutes or until the thermometer shows a needle at 180 degrees and the juices coming out of the meat are clear. This indicates that the Grilled Cornish Hens are ready to be removed and enjoyed.
