Well, after 10 minutes, the rice will absorb most of the water, then you can add the next ingredient. Also add vegan butter – this way the pudding is richer in taste and instead of fat and eggs – then add the lemon zest, and two cups of soy milk. Alternatively you can add two large slices of lemon zest and you can remove it at the end of the cooking time.
Before the milk boils, bring the mixture back to its place, reduce the heat and bring to a boil, letting the rice cook for 5 minutes while covering it.
Next, add the sugar and extra vanilla, the vanilla will help enhance all the other flavors. Cook your rice for another 2-5 minutes, until the rice is soft (soft). Taste carefully and let it cook for a few minutes if you need more time.
When the rice is tender, it is time to turn off the fire. Let stand until the rice is slightly cold and continue to mix the slurry.
What’s A Slurry?
Slurry is a practical way of thickening sauces, gravy, or in this case it is to thicken puddings.
When the rice has cooled, take a small plate and whisk together 2 tablespoons arrowroot flour and turmeric powder to give it a yellow color (instead of the yolk color from the egg) and 2 tablespoons soy milk. Beat vigorously until the starch is completely combined with the milk. This is now a slurry, so a slurry is a combination of starch or flour with a small amount of liquid and when this mixture is added to something hot, it thickens.
When the rice is very cold, the steam is reduced, now add the slurry little by little using one hand, and the other hand to stir vigorously.
Note that the slurry is added when the rice is completely cold.
The slurry added to the cold rice will immediately thicken the rice and continue to stir the mixture until well combined. When going to eat it, let the rice remain thickened for an hour on the table.
If you can’t wait to enjoy it, you can immediately enjoy it happily. However, Arroz Doce is generally served cold and after being garnished on top. Garnish the top with cinnamon powder, but this must be done when the rice has completely cooled, otherwise the cinnamon powder will slightly soak into the rice.
